You’ll need
Batch size
- 8 (80g)scotch bonnets, stems removed
- 2 (200g)carrots, chopped
- 150gmango, fresh or frozen
- 1 (150g)onion
- 6 cloves (30g)garlic
- 200mlcider vinegar
- 20gsugar
- 6gsalt
- 2gallspice
- 150mlwater
Allergens: Sulphites. Check the labels on stock cubes, sauces and pastes, as brands vary.
Use it for
A few drops on rice and peas · 1 cube; Spiked into a stew or chilli · 1 cube; Mixed into mayo for chicken burgers · 1 cube
Method
- Step 1: Wear gloves. Put everything in a pan and simmer, covered, for 15 minutes until the carrot is soft.
- Step 2: Leave to cool slightly; open a window, as the steam is strong.
- Step 3: Blend until completely smooth.
- Step 4: Taste, carefully, for salt and sharpness.
- Step 5: Cool, pour into 30ml trays and freeze.

Cook’s notes
- Thaw for 20 minutes; it stays pourable.
- One cube flavours a whole pot; use drops on a plate.
- Keep a thawed cube in a small jar in the fridge for up to 2 weeks.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 6 months.

- Thaw for 20 minutes; it stays pourable. Never refreeze thawed cubes.

Scotch Bonnet Hot Sauce questions
Can I use habaneros instead?
Habaneros are close relatives of scotch bonnets, with a similar heat and fruity flavour. Use the same weight.
Why is there carrot in it?
The carrot adds body, sweetness and a bright orange colour. It thickens the sauce naturally, so it stays smooth and pourable without any starch.
Can I use other fruit instead of mango?
Pineapple or papaya both work well and keep the sauce fruity. Use the same weight, fresh or frozen.
