A Portuguese-style hot sauce of bird's eye chillies, roasted red pepper, garlic, lemon and smoked paprika.

You’ll need
- 10 (20g)bird's eye chillies
- 1 × 460g jarroasted red peppers, drained
- 8 cloves (40g)garlic
- 2lemons, juice and zest
- 6gsmoked paprika and oregano
- 40mlred wine vinegar
- 100mlolive oil
- 5gsalt

Piri piri chicken: 4 cubes per 500g, marinate and roast · 4 cubes; Spicy prawns · 2 cubes; Dip for chips · 1 cube
Method
- Step 1: Wear gloves and remove the chilli stems.
- Step 2: Blitz everything until smooth.
- Step 3: Simmer in a small pan for 5 minutes to mellow the raw garlic.
- Step 4: Cool.
- Step 5: Pour into 30ml trays and freeze.

Cook’s notes
- Thaw for 30 minutes for marinades, or drop straight into a pan.
- For a 3, use 5 chillies and remove the seeds.
- Marinate chicken for at least 2 hours.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 6 months.

- Thaw for 30 minutes for marinades, or drop straight into a pan. Never refreeze thawed cubes.

Piri Piri Sauce questions
Can I roast my own peppers instead of using a jar?
Roast 3 red peppers in a hot oven until blackened, then peel and deseed them. They give a slightly sweeter, smokier sauce.
Can I use it as a dip?
Stir a thawed cube into vegan mayonnaise or plant-based yoghurt for a quick dip for chips or roast potatoes.
What vegetables suit it?
It's good with roast cauliflower, sweet potato wedges, corn on the cob and firm tofu. Toss them in it before roasting or grilling.
