You’ll need
- 2 (320g)red peppers
- 20gdried red chillies, soaked
- 6 cloves (30g)garlic
- 8gcaraway, cumin and coriander seeds, toasted
- 4gsmoked paprika
- 30gtomato purée
- 15mllemon juice
- 60mlolive oil
- 4gsalt

Method
- Step 1: Roast the peppers at 220°C fan for 25 minutes until blackened. Peel and deseed.
- Step 2: Soak the dried chillies in hot water for 15 minutes; drain.
- Step 3: Toast the seeds in a dry pan for 1 minute, then grind.
- Step 4: Blitz everything to a smooth paste.
- Step 5: Spoon into 30ml trays and freeze.

Cook’s notes
- Thaw for 15 minutes, or fry straight from frozen.
- Add a few rose petals or rose water for a rose harissa.
- It's strong: start with half a cube.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 6 months.

Harissa questions
Can I use jarred roasted peppers?
Drained jarred roasted peppers save the oven time and work well. Pat them dry so the paste isn't watery.
Why toast and grind the seeds yourself?
Toasting releases the oils in the seeds, and grinding them fresh gives a much brighter, more aromatic paste than ready-ground spices.
Can I use it as a marinade?
Mix a thawed cube with olive oil and lemon juice and rub it over chickpeas, cauliflower or aubergine before roasting. It also makes a quick dressing for grain salads.
