You’ll need

  • 500gbeef mince (10% fat)
  • 1 (150g)onion, finely chopped
  • 1 (160g)green pepper, finely diced
  • 150gcarrot, grated
  • 200gpassata
  • 60gtomato ketchup
  • 30gtomato purée
  • 15mlWorcestershire sauce
  • 10g (2 tsp)American mustard
  • 10glight brown sugar
  • 3gsmoked paprika
  • 2 cloves (10g)garlic
  • 10mlrapeseed oil
  • 100mlwater

Method

  1. Step 1: Heat the oil in a large pan over a medium-high heat and brown the mince for 8–10 minutes, breaking it up finely.
  2. Step 2: Add the onion, pepper and carrot and cook for 6 minutes. Add the garlic and smoked paprika for 1 minute.
  3. Step 3: Add the passata, ketchup, purée, Worcestershire, mustard, sugar and water.
  4. Step 4: Simmer, uncovered, for 15 minutes until thick enough to pile on a bun.
  5. Step 5: Taste for sweet and tangy balance, season, cool and freeze.

Hotter: add a few dashes of hot sauce and ½ tsp cayenne.

  • The carrot sweetens it and stretches the mince.
  • A dash of hot sauce turns it into a grown-up version.
  • Turkey mince works too.

Freeze, reheat and serve

Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.

Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.

Sloppy Joe Mince questions

How do I make it with turkey mince?

Use the same weight and add a splash more oil, as turkey is leaner and can stick. It browns less readily, so give it a few extra minutes before adding the veg.

What can I use instead of Worcestershire sauce?

A dash of soy sauce adds a similar savoury note. Most Worcestershire sauce contains anchovies, so this is also the swap to make if you avoid fish.

Can I use a different mustard?

Dijon works at the same amount. English mustard is much stronger, so use about half.
