You’ll need
- 500gbeef mince (10% fat)
- 2 (250g)onions, finely chopped
- 150gcarrot, grated
- 60ggherkins, finely chopped
- 60gtomato ketchup
- 30gtomato purée
- 15g (1 tbsp)American mustard
- 10mlWorcestershire sauce
- 4gsmoked paprika, garlic powder
- 10mlrapeseed oil
- 1 cubebeef stock cube
- 200mlwater, to make up the stock

Method
- Step 1: Heat the oil in a large pan over a high heat and brown the mince for 8–10 minutes, breaking it up, until crisp in places. Spoon off any excess fat.
- Step 2: Lower the heat to medium, add the onions and carrot and cook for 8 minutes until soft and sweet. Add the paprika and garlic powder for 1 minute.
- Step 3: Add the purée, ketchup, mustard, Worcestershire and stock and simmer, uncovered, for 10 minutes until thick.
- Step 4: Stir in the gherkins and season.
- Step 5: Cool and freeze in 70g blocks.
Hotter: add pickled jalapeños and a dash of hot sauce.

Cook’s notes
- Melt a slice of cheese over each portion at serving for the full cheeseburger.
- The carrot sweetens it and stretches the mince.
- Kids love it; leave the gherkins on the side if they're not fans.

Freeze, reheat and serve

- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 237 kcal and 26.1g protein before rice, bread or potatoes.
Cheeseburger Mince questions
Can I use turkey mince?
Turkey mince works. It is leaner, so brown it well over a high heat to get some colour before adding the onions.
Can I use dill pickles instead of gherkins?
Any pickled gherkins work. Sweet ones give a classic burger-bar flavour, while dill pickles make it sharper.
Can I use a different mustard?
Mild American mustard suits it best, but Dijon works if that's what you have. It is stronger, so start with a little less and taste.
