  • 150gtomato ketchup
  • 100mlcider vinegar
  • 60gdark brown sugar
  • 40gblack treacle
  • 30mlWorcestershire sauce
  • 10gsmoked paprika
  • 10gAmerican mustard
  • 4ggarlic and onion powder
  • 2gcayenne

Allergens: Gluten, Fish, Mustard, Sulphites. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Put everything in a saucepan and whisk well.
  2. Step 2: Bring to a simmer over a medium heat.
  3. Step 3: Simmer, uncovered, for 20 minutes, stirring often, until thick and glossy.
  4. Step 4: Taste and adjust the sweet and sharp balance.
  5. Step 5: Cool, pour into 30ml trays and freeze.

Cook’s notes

  • Add a cube of Chipotle Adobo for smoky heat.
  • It catches easily at the end; keep stirring.

Use it for

  • Pulled pork or chicken: 4 cubes per 500g · 4 cubes
  • Glaze for ribs or wings · 2 cubes
  • Dip for chips · 1 cube

Freeze, reheat and serve

Freeze
Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 4 months.
Use from frozen
Thaw for 30 minutes as a dip, or drop straight into a pan. Never refreeze thawed cubes.

BBQ Sauce questions

Can I use it as a marinade?

It works better as a glaze than a long marinade, because the sugar burns easily. Brush it on in the last 10 to 15 minutes of grilling or roasting, then add another layer just before serving.

What can I use instead of black treacle?

Molasses is the closest swap. Failing that, use more dark brown sugar; the sauce will be a little sweeter and less deep.

How do I make it thinner for basting?

Whisk a thawed cube with a splash of water or apple juice until it's the consistency you want. It thickens again as it cooks on the meat.
