You’ll need

Batch size
  • 550glean pork loin steaks, thin strips
  • 300gcourgette, 1cm dice
  • 150gcarrot, grated
  • 120gred pepper, sliced
  • 150gleek, sliced
  • 300mllactose-free milk
  • 20gcornflour
  • 2 clovesgarlic, crushed
  • 10mlrapeseed oil
  • 8g (1 tbsp)sweet paprika
  • 10mlsoy sauce
  • 15gfresh parsley
  • 1 cubestock cube
  • 200mlwater

Method

  1. Step 1: Brown the pork strips in the oil and lift out.
  2. Step 2: Soften the leek, carrot and pepper for 6 minutes, adding the garlic and paprika for the last minute.
  3. Step 3: Add the stock, soy, pork and courgette. Simmer 10 minutes.
  4. Step 4: Stir in the milk mixed with the cornflour and simmer 3 minutes until creamy.
  5. Step 5: Stir in the parsley. Cool and freeze in 70g blocks.

Cook’s notes

  • Lactose-free milk thickened with cornflour freezes better than soured cream.
  • Add a spoon of lactose-free yoghurt or crème fraîche when serving.
  • Chicken breast works too.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
A portion
3 blocks (210g) make a dinner for one adult: about 168 kcal and 19.5g protein before rice, bread or potatoes.

Paprika Pork Stroganoff questions

Can I use pork tenderloin?

Pork tenderloin works well and is just as lean. Cut it into the same thin strips and brown it quickly so it doesn't toughen.

Why mix the cornflour into the milk?

Cornflour lumps if it goes straight into hot liquid. Stirred into the cold milk first, it thickens the sauce smoothly and helps stop the milk splitting as it simmers.

Can I use a plant-based milk?

Unsweetened oat or soya milk works in place of the lactose-free milk and makes the dish dairy-free. Avoid sweetened or vanilla versions, which would clash with the paprika.
