You’ll need

Batch size
  • 500gbeef mince (10% fat)
  • 300gbroccoli, small florets
  • 150gcarrot, matchsticks
  • 4 cloves (20g)garlic
  • 20gfresh ginger
  • 40mloyster sauce
  • 30mlsoy sauce
  • 15glight brown sugar
  • 15gcornflour
  • 10mlsesame oil
  • 4 (60g)spring onions, sliced
  • 10mlrapeseed oil
  • 250mlwater

Allergens: Molluscs, Sesame, Soya. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Heat the oil in a wok or large pan over a high heat and fry the mince for 8 minutes until well browned and crisp in places.
  2. Step 2: Add the broccoli and carrot with 3 tbsp of the water, cover and steam-fry for 3 minutes. Add the garlic and ginger for 1 minute.
  3. Step 3: Mix the oyster sauce, soy, sugar, cornflour and the rest of the water and pour in. Simmer for 2 minutes until thick and glossy.
  4. Step 4: Off the heat, stir in the sesame oil and spring onions.
  5. Step 5: Cool quickly and freeze in 70g blocks.

Hotter: add 1 tsp chilli flakes with the garlic.

Cook’s notes

  • To serve 1: cook 1 nest of noodles, reheat 3 blocks with 2 tbsp water, then toss together.
  • Keep the broccoli just tender; it softens on reheating.
  • Chicken mince works too.

Serve it

Tossed through lo mein or egg noodles · Over rice with a fried egg · With rice noodles and chilli oil.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
A portion
3 blocks (210g) make a dinner for one adult: about 240 kcal and 24.3g protein before rice, bread or potatoes.

Beef & Broccoli Noodle Base questions

Can I use sliced steak instead of mince?

Thinly sliced rump or sirloin works well. Stir-fry it in two batches over a high heat for a couple of minutes, lift it out, and return it with the sauce so it doesn't toughen.

What can I use instead of oyster sauce?

A mushroom-based vegetarian stir-fry sauce is the closest swap, or use a little extra soy with a pinch more sugar. Check the label if you need it gluten-free.

Why add cornflour to the sauce?

It thickens the sauce so it turns glossy and clings to the noodles instead of pooling in the bottom of the bowl.
