You’ll need
- 500gbeef mince (10% fat)
- 2 (320g)green and red peppers, diced
- 1 (150g)onion, diced
- 200gbroccoli, small florets
- 80gblack bean sauce
- 4 cloves (20g)garlic
- 20gfresh ginger
- 15mlsoy sauce
- 15mloyster sauce
- 10gcornflour
- 1 (10g)red chilli
- 10mlrapeseed oil
- 150mlwater

Method
- Step 1: Heat the oil in a wok or large pan over a high heat and fry the mince for 8 minutes until well browned.
- Step 2: Add the onion, peppers and broccoli and stir-fry for 4 minutes. Add the garlic, ginger and chilli for 1 minute.
- Step 3: Mix the black bean sauce, soy, oyster sauce, cornflour and water and pour in.
- Step 4: Simmer for 3 minutes until thick and glossy.
- Step 5: Cool quickly and freeze in 70g blocks.
Hotter: add 2 dried red chillies or a spoon of chilli crisp.

Cook’s notes
- Keep the veg crisp; they soften on reheating.
- Jars of black bean sauce vary in saltiness, so taste before adding more soy.
- Pork mince works well too.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 210 kcal and 22.8g protein before rice, bread or potatoes.
Chinese Black Bean Beef questions
Can I use fermented black beans instead of the jar?
Rinse and roughly chop about 2 tbsp of fermented black beans and fry them with the garlic, then add a pinch of sugar to the sauce. They are saltier and more pungent than jarred sauce, so taste before adding any more soy.
What other vegetables can I use?
Mangetout, baby corn or sliced courgette work in place of the broccoli. Stir-fry them for the same 4 minutes so they keep some crunch.
Can I leave out the oyster sauce?
You can. Add a pinch of sugar in its place; the sauce will be a little less rich and glossy but still savoury.
