You’ll need

Batch size
  • 500gbeef mince (5% fat)
  • 1 tin (240g drained)black beans, rinsed
  • 300gsweet potato, 1cm dice
  • 200gcarrot, grated
  • 120gred pepper, diced
  • 40gspring onions, sliced
  • 2 clovesgarlic, crushed
  • 10mlrapeseed oil
  • 15mlsoy sauce
  • 14gcumin, sweet smoked paprika, oregano, cinnamon
  • 1 cubestock cube
  • 300mlwater

Allergens: Soya. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Brown the beef in the oil for 8 minutes until properly brown.
  2. Step 2: Add the carrot, pepper, garlic and spices for 3 minutes.
  3. Step 3: Add the sweet potato, stock and soy. Simmer, lid ajar, for 25 minutes.
  4. Step 4: Add the black beans and simmer 10 minutes, crushing some sweet potato to thicken.
  5. Step 5: Stir in the spring onions. Cool and freeze in 70g blocks.

Cook’s notes

  • Crushed sweet potato gives the sauce body without tomato.
  • Check the paprika says sweet (dulce), not hot.
  • Lactose-free yoghurt and grated cheddar make good toppings.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.

3 blocks (210g) make a dinner for one adult: about 216 kcal and 20.4g protein before rice, bread or potatoes.

Can I use turkey mince instead of beef?

Turkey mince works. It releases more water than beef, so give it a few extra minutes in the pan until it browns properly before adding the vegetables.

Why grate the carrot?

Grated carrot melts into the sauce and adds sweetness and body alongside the crushed sweet potato, so you don't miss the tomato.

Can I swap the black beans?

Pinto or red kidney beans work in the same drained weight. Keep it to one tin across the batch, as the recipe does.
