You’ll need

Batch size
  • 700gbeef joint (topside, silverside or brisket)
  • 2 (300g)onions, chopped
  • 2 (300g)red peppers, diced
  • 250gcarrots, diced
  • 1 × 400g tinchopped tomatoes
  • 30gtomato purée
  • 3 cloves (15g)garlic
  • 15gplain flour
  • 12gsweet paprika
  • 4gsmoked paprika
  • 3gcaraway seeds
  • 2gdried marjoram
  • 15mlrapeseed oil
  • 1 cubebeef stock cube
  • 500mlwater

Allergens: Gluten. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Cut the beef into 3cm chunks, toss in the flour and brown in the oil in two batches. Lift out. (12 min)
  2. Step 2: Soften the onions for 10 minutes, then add the peppers, carrots and garlic for 5 minutes.
  3. Step 3: Take the pan off the heat and stir in the paprikas, caraway and marjoram so the paprika doesn't burn.
  4. Step 4: Add the tomatoes, purée and stock, return the beef, cover and braise at 150°C fan until tender. (2 hr 30)
  5. Step 5: Break the beef up a little with a spoon and simmer uncovered until thick. (15 min) Cool and freeze.

Hotter: swap half the sweet paprika for hot paprika.

Cook’s notes

  • Stir a spoon of soured cream through each portion at reheating; don't freeze it in.
  • Burnt paprika turns bitter, which is why it goes in off the heat.
  • A pinch of hot paprika adds a little kick.

Buttered noodles or rice · Mash with a spoon of soured cream · Crusty bread.

Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
A portion
3 blocks (210g) make a dinner for one adult: about 240 kcal and 22.8g protein before rice, bread or potatoes.

Hungarian Beef Goulash questions

Can I use diced braising steak instead of a joint?

Diced braising steak or chuck works well and saves cutting it up yourself. Check the pieces are about 3cm, and trim off any large pieces of fat before flouring.

Can I cook it on the hob instead of in the oven?

Keep the lid on and the heat as low as it will go, so it barely bubbles, and stir now and then so it doesn't catch on the bottom. It takes about the same time; the beef is ready when it breaks apart with a spoon.

Can I make it gluten-free?

Toss the beef in cornflour instead of plain flour and use a gluten-free stock cube. Cornflour thickens more strongly than flour, so you need a little less.
