You’ll need

Batch size
  • 2 tins (480g drained)butter beans, rinsed
  • 350gsweet potato, 1.5cm dice
  • 200gleek, sliced
  • 150gcarrot, diced
  • 200gfrozen leaf spinach
  • 200mllactose-free milk
  • 15gcornflour
  • 2 clovesgarlic, crushed
  • 15mlrapeseed oil
  • 2gdried thyme
  • 10gfresh parsley
  • 1 cubestock cube
  • 300mlwater

Allergens: Milk. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Soften the leek and carrot in the oil for 8 minutes, adding the garlic for the last minute.
  2. Step 2: Add the sweet potato, thyme and stock. Simmer 15 minutes.
  3. Step 3: Add the butter beans and spinach for 5 minutes.
  4. Step 4: Stir in the milk mixed with the cornflour and simmer 3 minutes. Add the parsley.
  5. Step 5: Cool and freeze in 70g blocks.

Cook’s notes

  • Two tins across the batch is a moderate portion of beans per meal.
  • A little grated cheddar at the table is a good match.
  • Cannellini work too.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
A portion
3 blocks (210g) make a dinner for one adult: about 174 kcal and 7.8g protein before rice, bread or potatoes.

Can I use a plant milk?

Unsweetened oat milk works with the cornflour in the same way and makes the stew dairy-free. Use an unsweetened one so the sauce doesn't taste sweet.

What can I use instead of sweet potato?

Butternut squash or ordinary potato works in the same weight. Ordinary potato may need a few minutes longer to soften.

Why mix the cornflour into the milk first?

Stirring cornflour into cold milk before it goes in stops it forming lumps, and a short simmer is all it needs to thicken the sauce.
