You’ll need

Batch size
  • 400gfrozen leaf spinach
  • 200g (1 pack)tempeh, 1cm cubes
  • 200gpotato, 1cm dice
  • 150ggreen beans, 2cm lengths
  • 300mllight coconut milk
  • 30gspring onions, sliced
  • 15gfresh ginger
  • 15g (1 tbsp)ground linseed
  • 15mlrapeseed oil
  • 2 clovesgarlic, crushed
  • 10ggaram masala, cumin, turmeric
  • 100mlwater

Allergens: Soya. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Boil the potato for 6 minutes and drain. Fry the tempeh in half the oil until golden; set aside.
  2. Step 2: Fry the garlic, ginger and spices in the rest of the oil for 1 minute.
  3. Step 3: Add the spinach, coconut milk and water; simmer 8 minutes and blitz roughly.
  4. Step 4: Fold in the potato, green beans and tempeh and simmer 5 minutes. Stir in the spring onions and linseed.
  5. Step 5: Cool and freeze in 70g blocks.

Cook’s notes

  • Tempeh is fermented, which makes it one of the easiest soy foods to digest.
  • Green beans replace the peas from the original version.
  • Firm tofu works instead of tempeh.

Rice and a chapati · As a side with roast chicken · Wrapped in a flatbread.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
A portion
3 blocks (210g) make a dinner for one adult: about 207 kcal and 11.4g protein before rice, bread or potatoes.

Why boil the potato first?

Parboiling means the potato is tender after the short final simmer; raw cubes would still be hard after 5 minutes in the sauce.

Can I use fresh spinach instead of frozen?

Fresh spinach works. Wilt it down in batches in the pan before adding the coconut milk; you'll need a large bagful, as it shrinks a lot.

What does the ground linseed do?

Stirred in at the end, it soaks up a little of the liquid and thickens the sauce slightly, which helps the blocks hold together. Leave it out if you don't have any; the sauce will just be a little looser.
