You’ll need

Batch size
  • 160gred split lentils (dry), rinsed
  • 300gcarrot, grated
  • 150gbutternut squash, small dice
  • 200mllight coconut milk
  • 30gspring onions, sliced
  • 2 clovesgarlic, crushed
  • 10gfresh ginger
  • 10mlrapeseed oil
  • 7gcumin, coriander, turmeric
  • 700mlwater
  • 1 cubestock cube

Method

  1. Step 1: Soften the carrot in the oil for 6 minutes. Add the garlic, ginger and spices for 1 minute.
  2. Step 2: Add the lentils, squash, water and stock. Simmer 25 minutes, stirring often, until the lentils collapse.
  3. Step 3: Stir in the coconut milk and simmer 5 minutes, mashing for a smoother texture.
  4. Step 4: Stir in the spring onions.
  5. Step 5: Cool and freeze in 70g blocks.

Cook’s notes

  • Rinse the lentils well; it helps them cook evenly.
  • Blitz it smooth as a pasta sauce for fussy eaters.
  • Frozen butternut chunks save time.

Rice or mini naan · Stirred into pasta shells · Topped with a fried egg.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.

Why grate the carrot?

Grated carrot softens quickly and melts into the lentils, so the dal is smooth and sweet without needing tomato.

Can I use full-fat coconut milk?

Full-fat coconut milk works in the same amount and makes the dal richer and creamier.

What can I use instead of butternut squash?

Use the same weight of extra carrot, or sweet potato in small dice so it cooks in the same time.
