You need 2kg of mince in all. Brown the mince in batches in your biggest pan first, then split it between four pans so each dish gets a head start.

0:00Prep. Dice the sweet potato and butternut, grate the carrots and courgettes, chop the peppers, slice the leek and spring onions and crush the garlic. Blitz the Verde green base. (30 min)
0:30Brown all the turkey in batches over a medium-high heat, splitting it into four labelled bowls. (25 min)
0:55Ragu Bianco: soften the carrot, fennel and leek, then add the turkey, courgette, herbs, stock and milk. Simmer gently for 35 min.
1:05Turkey, Butternut & Sage: leek, carrot and garlic, then the turkey, squash, sweet potato, sage and stock. Simmer for 20 min.
1:15Turkey Verde: pepper, courgette and spices, then the turkey, green base and stock. Simmer for 20 min.
1:25Taco mince: carrot, pepper and spices, then the turkey, sweet potato and stock. Simmer for 15 min.
1:40Finish each in turn as its recipe says: beans, lentils, oats, spinach or herbs.
1:55–2:40Cool, portion and freeze.
