Mild Turkey Taco Mince
All the cumin and smoked paprika of taco night, with sweet potato and black beans and none of the chilli.

You’ll need
- 500gturkey mince (2% fat)
- 350gsweet potato, 1cm dice
- 1 tin (240g drained)black beans, rinsed
- 150gcarrot, grated
- 120g (1 small)red pepper, finely diced
- 40gspring onions, sliced
- 20gporridge oats
- 10mlrapeseed oil
- 2 clovesgarlic, crushed
- 17gcumin, sweet smoked paprika, coriander, oregano, cinnamon
- 1 cubestock cube
- 250mlwater

Method
- Step 1: Brown the turkey in the oil for 8 minutes, breaking it up, adding the garlic for the last minute.
- Step 2: Add the carrot, pepper and spices for 3 minutes.
- Step 3: Add the sweet potato and stock; cover and simmer for 15 minutes until the potato is just tender.
- Step 4: Stir in the black beans and oats and simmer uncovered for 8 minutes, lightly crushing some sweet potato to thicken.
- Step 5: Stir in the spring onions, cool and freeze in 70g blocks.

Cook’s notes
- Sweet smoked paprika gives smokiness without heat. Check the label says sweet (dulce), not hot.
- Skip salsa and lime on top if they set off your reflux.
- A spoon of lactose-free yoghurt cools it further.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 216 kcal and 21.3g protein before rice, bread or potatoes.

What are the oats for?
The oats soak up the stock and thicken the mince, so it holds together in tacos and sets into firm blocks. They disappear into the sauce, so you won't notice them.
Can I use beef mince?
Lean beef mince works well and tastes closer to classic taco mince. Spoon off any fat after browning, before adding the veg.
Can I leave out the black beans?
Leave them out and the mince will just be a little less thick, so crush a bit more of the sweet potato in step 4.
