Build a dinner

The plate

  1. Pick three blocks: one dish, or two that go together from the list below.
  2. Add a carb: about 75g dry rice or pasta per person, a jacket potato, two wraps or flatbreads, or 150g cooked grains.
  3. Add something fresh: salad, steamed greens, a quick slaw, or a handful of frozen veg stirred in while the blocks reheat.
  4. Finish it: a spoon of yoghurt or soured cream, grated cheese, fresh herbs, a squeeze of lime, or some heat from Turn up the heat.

Ten-minute sides

  • Microwave rice pouch or quick-cook couscous: ready in 2 to 5 minutes.
  • Jacket potato: microwave 8 to 10 minutes, then crisp in a hot oven for 10.
  • Flatbreads or tortillas: warm in a dry pan for 30 seconds a side.
  • Quick pickled onions: slice a red onion into lime juice with a pinch of salt and sugar.
