You’ll need

Batch size
  • 500gturkey mince (2% fat)
  • 200gcarrot, finely diced
  • 200gcourgette, grated
  • 120gfennel bulb, finely diced
  • 1 tin (240g drained)green lentils, rinsed
  • 200mllactose-free milk
  • 40gporridge oats
  • 60gleek, sliced
  • 15mlrapeseed oil
  • 2 clovesgarlic, crushed
  • 3grosemary, thyme, 2 bay leaves
  • 1 cubestock cube
  • 300mlwater

Allergens: Milk. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Brown the turkey in the oil over a high heat for 8 minutes, breaking it up finely, adding the garlic for the last minute.
  2. Step 2: Lower the heat. Add the carrot, fennel and leek and cook for 10 minutes until soft.
  3. Step 3: Add the courgette, herbs, stock and milk. Simmer very gently, partly covered, for 35 minutes.
  4. Step 4: Add the lentils and oats and cook for 10 minutes until thick and creamy.
  5. Step 5: Remove the bay, season, cool and freeze in 70g blocks.

Cook’s notes

  • No tomato and no wine, so it's one of the gentlest IBS-friendly recipes for reflux.
  • A little grated parmesan at the table works; it's naturally low in lactose.
  • Pork mince (5%) works too.

Serve it

Tagliatelle or gluten-free pasta · Layered into a white lasagne · Over a jacket sweet potato.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.

What if I can't find fennel?

Use extra carrot and courgette in its place. You lose the gentle aniseed note, so a little extra thyme helps keep it fragrant.

Why simmer it so gently?

Milk can catch on the bottom of the pan or split if it boils hard. A low, partly covered simmer lets it turn the turkey tender and creamy.

How do I make a white lasagne with it?

Defrost the blocks and layer them with lasagne sheets, gluten-free if needed, and a white sauce made with lactose-free milk. Bake until bubbling and golden.
