You’ll need
- 250gsmooth peanut butter
- 1 × 400ml tincoconut milk
- 60mlsoy sauce
- 2limes, juiced
- 30ghoney or brown sugar
- 4 cloves (20g)garlic
- 15gfresh ginger
- 5gmild curry powder
- 2gchilli flakes
- 100mlwater

Method
- Step 1: Put everything in a saucepan over a low heat.
- Step 2: Whisk until smooth and just simmering.
- Step 3: Cook for 3 minutes, stirring, until thick. Loosen with water if needed.
- Step 4: Cool.
- Step 5: Pour into 30ml trays and freeze.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 4 months.

Satay questions
Can I use crunchy peanut butter?
Crunchy works well if you like a bit of texture, especially for dipping. Smooth gives a silkier sauce for noodles.
Can I make it vegan?
Use the brown sugar rather than honey. Everything else in the sauce is plant-based.
How do I use it as a dressing?
Thaw a cube and whisk it with a little lime juice and warm water until pourable. It's good over a crunchy slaw or a cold noodle salad.
