You’ll need

Batch size
  • 2 (300g)onions, chopped
  • 2 (200g)carrots, chopped
  • 1 (150g)apple, grated
  • 4 cloves (20g)garlic
  • 20gfresh ginger
  • 25gmild curry powder
  • 3gturmeric
  • 40gplain flour
  • 30mlsoy sauce
  • 20ghoney
  • 2chicken or veg stock cubes
  • 800mlwater, to make up the stock
  • 30mlrapeseed oil

Allergens: Gluten, Soya. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Heat the oil over a medium heat and soften the onions and carrots for 12 minutes.
  2. Step 2: Add the garlic, ginger, curry powder and turmeric for 1 minute, then the flour for 1 minute.
  3. Step 3: Gradually whisk in the stock, then add the apple, soy and honey. Simmer for 15 minutes.
  4. Step 4: Blend completely smooth and season.
  5. Step 5: Cool, pour into 30ml trays and freeze.

Cook’s notes

  • Garam masala at the end adds a little extra warmth.
  • It thickens in the freezer; loosen with water when reheating.

Use it for

  • Chicken katsu for one: breaded chicken, rice and 3 cubes · 3 cubes
  • Katsu curry udon · 4 cubes
  • Over chips with spring onions · 3 cubes

Freeze, reheat and serve

Freeze
Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 6 months.
Use from frozen
Straight from frozen into a pan with a splash of water, whisking. Never refreeze thawed cubes.

Katsu Curry Sauce questions

Can I make it vegan?

Use vegetable stock cubes and swap the honey for sugar or maple syrup. Everything else in the sauce is plant-based.

Can I make it gluten-free?

Use a gluten-free flour blend for the roux, tamari instead of soy sauce and gluten-free stock cubes. Check the curry powder label too.

What else can I serve it with?

It's good with breaded tofu, aubergine or sweet potato katsu, or simply poured over rice with a fried egg on top.
