Batch size
- 200gdark chocolate (70%), chopped
- 200mldouble cream
- 60ggolden syrup
- 30gbutter
- 1gsalt

Ice cream sundaes · 1 cube; Warm over a steamed pudding or brownies · 1 cube; Dip for strawberries · 1 cube
Method
- Step 1: Put the cream, syrup, butter and salt in a pan over a low heat until just simmering.
- Step 2: Take off the heat and add the chocolate.
- Step 3: Leave for 2 minutes, then stir until smooth and glossy.
- Step 4: Cool.
- Step 5: Pour into 30ml trays and freeze.

Cook’s notes
- Warm 15 seconds in the microwave or thaw 20 minutes.
- Use a good dark chocolate; it's most of the flavour.
- Add a pinch of chilli for a Mexican chocolate sauce.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 3 months.

- Warm 15 seconds in the microwave or thaw 20 minutes. Never refreeze thawed cubes.

Chocolate Fudge Sauce questions
Can I use milk chocolate?
You can, but the sauce will be much sweeter and a little thinner. Cut back on the golden syrup to balance it.
Why leave the chocolate to stand before stirring?
The hot cream melts the chocolate gently without any direct heat. Stirring too soon or heating it hard can make chocolate grainy or split.
How do I make it thinner for drizzling?
Warm it with a splash of milk or cream and stir until smooth. Add a little at a time until it runs off a spoon the way you want.
