You’ll need

Batch size
  • 500gfrozen mixed berries
  • 60gcaster sugar
  • 15mllemon juice
  • 50mlwater

Method

  1. Step 1: Put everything in a pan over a medium heat.
  2. Step 2: Simmer for 8 minutes, stirring, until the berries collapse.
  3. Step 3: Blend, then push through a sieve to remove the seeds.
  4. Step 4: Taste and add a little more sugar if needed. Cool.
  5. Step 5: Pour into 30ml trays and freeze.

Cook’s notes

  • Frozen berries are cheaper than fresh and just as good here.
  • Strawberry, raspberry or blackcurrant on their own all work.

  • Over yoghurt and granola · 1 cube

Freeze, reheat and serve

Freeze
Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 4 months.
Use from frozen
Thaw for 20 minutes at room temperature. Never refreeze thawed cubes.

Berry Coulis questions

Do I have to sieve it?

No, but sieving removes the seeds and gives the coulis its silky texture. If you don't mind the seeds, just blend it well for a more rustic sauce.

Can I use it in drinks?

Stir a thawed cube into sparkling water or lemonade, or blend it into a smoothie. It also makes a quick ripple through plant-based yoghurt.

How do I make it thicker?

Simmer it for a few minutes longer before blending, or stir in ½ tsp cornflour mixed with a little cold water and bubble for a minute. It also thickens slightly as it cools.
