Sage Pork & Sweet Potato Stew

You’ll need
- 550glean pork loin steaks, 2cm pieces
- 400gsweet potato, 1.5cm dice
- 200gcarrot, diced
- 150gparsnip, diced
- ½ tin (120g drained)green lentils, rinsed
- 80gleek, sliced
- 15mlrapeseed oil
- 2 clovesgarlic, crushed
- 10mlmaple syrup
- 10gcornflour
- 5gdried sage and thyme
- 1 cubestock cube
- 400mlwater

Method
- Step 1: Toss the pork in the cornflour and brown in the oil. Lift out.
- Step 2: Soften the leek and carrot in the pan for 6 minutes, adding the garlic for the last minute.
- Step 3: Return the pork with the parsnip, herbs, maple syrup and stock. Cover and simmer 30 minutes.
- Step 4: Add the sweet potato and simmer, partly covered, for 20 minutes, then the lentils for 5. Crush a little sweet potato to thicken.
- Step 5: Cool and freeze in 70g blocks.

Cook’s notes
- Loin steaks are the leanest pork cut; trim any fat edge.
- Freeze the other half tin of lentils for your next batch.
- Chicken thigh works too.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.

Sage Pork & Sweet Potato Stew questions
How do I make it with chicken thigh?
Use the same weight of boneless thigh fillets cut into 2cm pieces, coated and browned in the same way. Thighs become tender sooner, so check them after about 20 minutes of the covered simmer.
Why toss the pork in cornflour?
The cornflour helps the pork brown, then slowly thickens the gravy as it simmers. That gives a stew firm enough to set into neat blocks.
Can I leave out the lentils?
Yes. They add body, so crush a little more of the sweet potato at the end to thicken the gravy instead.
