You’ll need

Batch size
  • 550glean lamb leg, diced, fat trimmed
  • 400gsweet potato, 2cm dice
  • 250gcarrot, diced
  • 1 tin (240g drained)cannellini beans, rinsed
  • 120gleek, sliced
  • 2 clovesgarlic, crushed
  • 10mlrapeseed oil
  • 15gcornflour
  • 10mlsoy sauce
  • 3gdried rosemary and thyme
  • 2 cubesstock cube
  • 500mlwater

Allergens: Soya. Check the labels on stock cubes, sauces and pastes, as brands vary.

Method

  1. Step 1: Toss the lamb in the cornflour and brown it in the oil in two batches. Lift out.
  2. Step 2: Soften the leek and carrot for 6 minutes, adding the garlic for the last minute.
  3. Step 3: Return the lamb with the herbs, stock and soy. Cover and braise at 150°C fan for 1 hour 15 minutes.
  4. Step 4: Add the sweet potato and cannellini and cook 25 minutes more, crushing some sweet potato into the gravy.
  5. Step 5: Cool and freeze in 70g blocks.

Cook’s notes

  • Leg is much leaner than shoulder; trim any visible fat.
  • Lamb is richer than other meats, so two blocks with veg make a lighter meal.
  • Slow cooker: 6 hours on Low.

Freeze, reheat and serve

Freeze
Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
Reheat
Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
A portion
3 blocks (210g) make a dinner for one adult: about 234 kcal and 19.2g protein before rice, bread or potatoes.

Can I use lamb shoulder instead of leg?

Shoulder stays tender and is more forgiving in a long braise, but it carries a lot more fat. Trim it hard and skim any fat from the top before cooling.

Can I use ordinary potatoes instead of sweet potato?

Ordinary potatoes in the same 2cm dice work well. They're less sweet and break down less, so crush a few more against the side of the pan to thicken the gravy.

Why toss the lamb in cornflour?

The cornflour helps the lamb brown and then thickens the gravy as it braises. It also keeps the stew gluten-free, which plain flour would not.
