Chicken, Carrot & Sweet Potato Tagine
Warm cinnamon and cumin chicken with chickpeas and sweet potato. No tomato, no dried fruit and no chilli.

You’ll need
- 500gchicken thigh fillets, 2cm pieces
- 300gsweet potato, 1.5cm dice
- 250gcarrot, small cubes
- 1 tin (240g drained)chickpeas, rinsed well
- 30gspring onions, sliced
- 15gfresh ginger, grated
- 15mlrapeseed oil
- 2 clovesgarlic, crushed
- 10ml (2 tsp)maple syrup
- 14gcumin, coriander, cinnamon, turmeric, sweet paprika
- 15gfresh coriander
- 1 cubestock cube
- 350mlwater

Method
- Step 1: Soften the carrot in the oil over a medium heat for 8 minutes. Add the garlic, ginger and spices for 1 minute.
- Step 2: Add the chicken and turn it in the spices until sealed, about 3 minutes.
- Step 3: Add the sweet potato, chickpeas, stock and maple syrup. Cover and simmer gently for 25 minutes.
- Step 4: Uncover and simmer for 10 minutes until thick, lightly crushing some sweet potato into the sauce.
- Step 5: Stir in the spring onions and chopped coriander. Cool and freeze in 70g blocks.

Cook’s notes
- Rinsing tinned chickpeas well washes away some of the compounds that cause wind.
- One tin across the batch keeps each meal to about 40g of chickpeas, a gut-friendly portion.
- Turkey thigh works just as well as chicken.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion

Do I need a tagine pot?
No. A casserole or deep pan with a lid does the same job; the name refers to the style of stew.
What can I use instead of sweet potato?
Butternut squash works in the same weight and size of dice, and crushes into the sauce in the same way.
What can I use instead of maple syrup?
A teaspoon or two of light brown sugar gives the same gentle sweetness. Stir it in with the stock so it dissolves.
