Turkey & Sweet Potato Shepherd's Mince
Savoury turkey mince with sweet potato, carrot and swede in a thyme gravy. Top it with mash or eat it as it is.

You’ll need
- 500gturkey mince (2% fat)
- 300gsweet potato, 1cm dice
- 200gcarrot, small dice
- 200gswede, small dice
- 1 tin (240g drained)green lentils, rinsed
- 60gleek, sliced
- 30gporridge oats
- 10mlrapeseed oil
- 2 clovesgarlic, crushed
- 8gyeast extract
- 15mlsoy sauce
- 10gcornflour
- 4gdried thyme and rosemary
- 2 cubesstock cube
- 500mlwater

Serve it

Method
- Step 1: Brown the turkey in the oil, breaking it up, for 8 minutes, adding the garlic for the last minute.
- Step 2: Add the carrot, swede and leek and cook for 8 minutes until starting to soften.
- Step 3: Add the sweet potato, herbs, yeast extract, soy and stock. Simmer, lid ajar, for 25 minutes.
- Step 4: Stir in the lentils and oats, then the cornflour mixed with 2 tbsp cold water. Simmer 5 minutes until thick.
- Step 5: Cool and freeze in 70g blocks.

Cook’s notes
- If onion bothers you, use a low-FODMAP stock cube.
- For a pie, defrost 6 blocks in a dish, top with mash and bake 25 minutes at 190°C.
- Swap the swede for parsnip for a sweeter result.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 204 kcal and 19.8g protein before rice, bread or potatoes.

Can I use lamb mince?
Lean lamb mince makes it closer to a classic shepherd's pie. It is fattier than turkey, so spoon off the excess fat after browning.
Can I make it gluten-free?
Use tamari instead of soy sauce, gluten-free oats and a gluten-free stock cube. Check the yeast extract label as well, as some contain barley.
Can I leave out the lentils?
Yes. Add a little extra diced carrot or swede instead, and let it simmer a few minutes longer to thicken.
