You’ll need
- 600gchicken thigh fillets, thin strips
- 200gbroccoli, small florets
- 150gcarrot, matchsticks
- 150ggreen beans, 3cm lengths
- 40g (2 tbsp)honey
- 50mlsoy sauce
- 6 cloves (30g)garlic
- 10gfresh ginger
- 10mlrice vinegar
- 15gcornflour
- 10gsesame seeds
- 4 (60g)spring onions, sliced
- 15mlrapeseed oil
- 200mlwater

Method
- Step 1: Heat the oil in a wok or large pan over a high heat and stir-fry the chicken until golden and cooked through. (6 min)
- Step 2: Add the broccoli, carrot and green beans with 3 tbsp of the water, cover and steam-fry for 3 minutes. Add the garlic and ginger for 1 minute.
- Step 3: Mix the honey, soy, vinegar, cornflour and the rest of the water and pour in. Bubble for 2 minutes until sticky and glossy.
- Step 4: Off the heat, stir in the sesame seeds and spring onions.
- Step 5: Cool quickly and freeze in 70g blocks.
Hotter: add a sliced red chilli or sriracha to serve.

Cook’s notes
- To serve 1: cook 1 nest of egg noodles, reheat 3 blocks with 2 tbsp water, then toss together.
- Use plenty of garlic: it mellows as it cooks.
- Salmon chunks work instead of chicken; add them in step 3 so they stay whole.

Freeze, reheat and serve

- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 246 kcal and 24g protein before rice, bread or potatoes.
Honey Garlic Chicken Noodle Base questions
Can I use chicken breast instead of thighs?
Breast works. Cut it into the same thin strips and stir-fry it for a minute or two less, so it stays tender.
Can I swap the vegetables?
Any quick-cooking veg of a similar size works, such as sugar snap peas, mangetout, sliced peppers or baby corn. Keep the total weight about the same so the sauce still coats everything.
Why mix the cornflour into the sauce before it goes in?
Cornflour added straight to a hot pan forms lumps. Stirred into the cold honey, soy and water first, it thickens the sauce evenly in the 2 minutes it bubbles.
