You’ll need
- 600gchicken thigh fillets, thin strips
- 200gbroccoli, small florets
- 1 (160g)red pepper, thin strips
- 150gcarrot, matchsticks
- 50g (2½ tbsp)gochujang
- 20g (1 tbsp)honey
- 30mlsoy sauce
- 4 cloves (20g)garlic
- 15gfresh ginger
- 15mlsesame oil
- 10gsesame seeds
- 10gcornflour
- 4 (60g)spring onions, sliced
- 10mlrapeseed oil
- 200mlwater

Serve it
Tossed through egg noodles with cucumber · Over udon with a fried egg · With sticky rice
Method
- Step 1: Heat the oil in a wok or large pan over a high heat and stir-fry the chicken until golden and cooked through. (6 min)
- Step 2: Add the broccoli, pepper and carrot and stir-fry for 3 minutes. Add the garlic and ginger for 1 minute.
- Step 3: Mix the gochujang, honey, soy, cornflour and water and pour in. Bubble for 2 minutes until sticky.
- Step 4: Off the heat, stir in the sesame oil, sesame seeds and spring onions.
- Step 5: Cool quickly and freeze in 70g blocks.
Hotter: add another tbsp of gochujang and a sliced red chilli.

Cook’s notes
- To serve 1: cook 1 nest of egg noodles, reheat 3 blocks with 2 tbsp water, then toss together for a minute.
- Keep the veg just crisp; they soften more on reheating.
- Firm tofu works instead of chicken for a vegetarian version.

Freeze, reheat and serve

- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 261 kcal and 23.7g protein before rice, bread or potatoes.
Gochujang Chicken Sesame Noodles Base questions
Why add the sesame oil off the heat?
Toasted sesame oil loses its nutty aroma quickly when it is cooked hard, so stirring it in at the end keeps the flavour strong.
Should I toast the sesame seeds?
Toasting them in a dry pan for 2 to 3 minutes until golden brings out a nuttier flavour. Do it before you start, as the wok is busy later.
Can I use something other than honey?
Maple syrup or light brown sugar work in the same amount. The sauce needs some sweetness to balance the gochujang and soy, so don't leave it out.
