You’ll need
- 500gchicken thigh fillets
- 2 tins (800g)chopped tomatoes
- 100gchorizo ring, diced
- 1 (180g)red pepper
- 1 (180g)green pepper
- 150mldry white wine
- 80g drainedpitted black olives, halved
- 1 (150g)onion
- 3 clovesgarlic
- 5mlrapeseed oil
- 30gtomato purée
- 4gpaprika
- 1gchilli flakes
- 1gthyme
- 2bay leaves
- 2gsalt

Method
- Step 1: Fry the chorizo, diced 1cm, in a dry pan with 5ml oil until it releases its red fat. (4 min)
- Step 2: Add the diced chicken and brown it in the chorizo oil. (5 min)
- Step 3: Add the sliced onion and the peppers in 2cm strips and soften. (6 min)
- Step 4: Stir in the garlic, purée, paprika and chilli for 1 minute, then pour in the wine and bubble until reduced by half. (3 min)
- Step 5: Add the tomatoes, thyme and bay. Cover and simmer. (20 min)
- Step 6: Add the olives and simmer uncovered until thick. (10 min) Remove the bay, season, cool and freeze.
Hotter: use hot chorizo and double the chilli flakes.

Cook’s notes
- Swap the wine for 150ml chicken stock plus 1 tsp white wine vinegar to save about 90p.
- Sliced chorizo (Tesco 150g) or Asda's 110g spicy chorizo (£1.25) are cheaper ways to buy the 100g.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 249 kcal and 20.4g protein before rice, bread or potatoes.
Chicken & Chorizo questions
Can I use chicken breast?
Breast works if you cut it into larger chunks. It cooks faster than thigh, so check it after about 15 minutes of simmering.
Why reduce the wine?
Bubbling it for a few minutes cooks off the raw alcohol taste and concentrates the flavour before the tomatoes go in.
Can I use smoked paprika?
Smoked paprika gives a deeper, more Spanish flavour that matches the chorizo. Use the same amount.
