You’ll need
- 500gbeef mince (5% fat)
- 300gsweet potato, 1cm dice
- 200gcarrot, small dice
- 150gswede, small dice
- 1 tin (240g drained)green lentils, rinsed
- 60gleek, sliced
- 30gporridge oats
- 10mlrapeseed oil
- 2 clovesgarlic, crushed
- 8gyeast extract
- 15mlsoy sauce
- 10gcornflour
- 2gdried thyme
- 2 cubesstock cube
- 500mlwater

Method
- Step 1: Brown the beef in the oil over a high heat for 8 minutes until properly brown, adding the garlic for the last minute.
- Step 2: Add the carrot, swede and leek for 8 minutes.
- Step 3: Add the sweet potato, thyme, yeast extract, soy and stock. Simmer, lid ajar, for 25 minutes.
- Step 4: Stir in the lentils and oats, then the cornflour mixed with 2 tbsp cold water. Simmer 5 minutes.
- Step 5: Cool and freeze in 70g blocks.

Cook’s notes
- 5% mince keeps the fat low; drain off any fat that pools.
- Mix with a block of the Turkey Shepherd's Mince for a bigger pie.
- Use tamari if you need it gluten-free.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, portion it into 70g blocks in a silicone tray, then bag and label them. It keeps for 3 months.
- Reheat
- Microwave 3 blocks, covered, for 1 minute, stir, then heat for another 1 to 2 minutes until piping hot all the way through. Or warm them in a pan with a splash of water. Never refreeze thawed blocks.
- A portion
- 3 blocks (210g) make a dinner for one adult: about 225 kcal and 19.8g protein before rice, bread or potatoes.

Can I use lamb mince instead?
Lean lamb mince makes it closer to a shepherd's pie. Lamb is usually fattier, so spoon off any fat that pools after browning.
What can I use instead of swede?
Use the same weight of extra carrot or parsnip, diced small so it cooks in the same time.
Why add oats and cornflour?
The oats soak up the gravy and give body, while the cornflour gives a glossy finish in just a few minutes, so the mince is thick enough to sit under mash.
