You’ll need
- 4 (640g)red peppers, quartered
- 1 × 400g tinchopped tomatoes
- 1 (150g)red onion, quartered
- 4 cloves (20g)garlic
- 3gsmoked paprika
- 15mlred wine vinegar
- 4gsalt
- 30mlolive oil

Method
- Step 1: Toss the peppers, onion and garlic with the oil and roast at 200°C fan for 30 minutes until soft and charred at the edges.
- Step 2: Tip into a saucepan with the tomatoes, paprika, vinegar and salt.
- Step 3: Simmer for 10 minutes.
- Step 4: Blend until completely smooth.
- Step 5: Cool, pour into 30ml trays and freeze.

Cook’s notes
- Straight from frozen into a pan, or thaw overnight for soup.
- Jarred roasted peppers (460g jar, drained) cut the time to 15 minutes.
- Stir in a spoon of cream cheese when reheating for a creamy pink sauce.

Freeze, reheat and serve
- Freeze
- Cool it within two hours, freeze it in 30ml ice-cube trays, then bag and label the cubes. It keeps for 4 months.

Roasted Red Pepper & Tomato questions
Can I use yellow or orange peppers?
Yellow and orange peppers are just as sweet and work well, though the sauce will be a different colour. Green peppers are more bitter, so avoid them.
Why add vinegar?
A little vinegar sharpens the sweetness of the roasted peppers so the sauce doesn't taste flat.
Can I add other vegetables?
Courgette, carrot or butternut squash can roast alongside the peppers and blend in easily. It's a good way to get more veg into a pasta sauce.
